
Lime & Kawakawa Greenshell™ Mussels with Mango Salsa
Ingredients
2 trays of KONO™ Heat’n’Eat Lime & Kawakawa Mussels
1 red capsicum, de-seeded
1 mango, peeled and diced
1 lime, juiced
2 tbsp runny honey
2 red chilli, finely diced
2 tomatoes, de-seeded and diced
½1 cucumber, peeled, de-seeded and finely diced
1 handful coriander, chopped
1 handful mint, shredded
½1 red onion, finely diced
1 tbsp olive oil
Method
Place capsicum on roasting tray, drizzle with oil and grill for 15 minutes. Remove from oven, then place in bowl and cover with glad wrap. Leave for 10 minutes, allowing capsicum to sweat. When cool enough to handle, peel off skin and dice finely.
Carefully mix all ingredients in a bowl, season well with cracked pepper and salt.
Microwave frozen KONO™ mussels for 2 minutes. Remove from shells and serve on Mango Salsa.
