Julie Cooper (Niue) is the photographer for George Fm radio station and she told us her mum Fila, is the best cook around.

So we set her mum a challenge. Fila had to come up with a tasty recipe using our favourite mayonnaise, Best Foods.

Parmesan Chive Potato Bake

  • 10 medium red potatoes or new potatoes (thin skinned)

  • 1 cup of Best Foods mayonnaise

  • 1 cup of milk

  • 10 tablespoons grated parmesan cheese

  • 1 cup chopped chives

  • 1 tsp cracked black pepper


1. Preheat oven to 150°C

2. Put potatoes in pot

3. Cover potatoes with cold water and bring
to the boil. When potatoes are tender (test with a fork) drain and cool

4. Thinly slice potatoes and arrange in 13x9 inch baking dish, set aside

5. Combine Best Foods mayonnaise, milk, 8 tablespoons parmesan cheese, chives and pepper in medium bowl

6. Evenly spoon mixture over potatoes

7. Top with remaining 2 tablespoons parmesan cheese

8. Bake for 25 minutes or until golden brown and bubbling, sprinkle with chives.
